Bacon Caramel

Bacon caramel like a chewy SKOR Bar with bacon. How much more of a comforting flavour combination could there ever be?

To do this, you'll need a couple of things beforehand, namely a pyrex dish or a couple of deep cookie sheets. You'll also need a candy thermometer and a silicone spatula, which is great for keeping the crevices of your saucepan from solidifying.

Start by frying up a good portion of bacon. I used about 300 grams worth, or 3/4 of a package. Cook as much as you can to be nice and crispy, without burning anything, which can be done over medium low heat.

Once the bacon's finished cooking, blot it well and remove any stubborn fatty bits that refuse to become crispy. Then trim it down into large-ish bacon bits that'd work nicely in a Caesar salad. Reserve in paper towel to promote further fat drainage.

Add to a deep saucepan the following:

1 cup sugar
1 cup corn syrup
1/2 cup butter
1/2 cup heavy cream
3-4 oz bourbon or maple syrup.

Over low to medium heat, dissolve everything while stirring constantly. Get your candy thermometer ready and then turn up the heat until reaches 240°F. Don't forget to keep stirring!

At that point, you'll be at the firm-ball stage and things should look a lot like this: (pic on website below)

Remove your pot from heat and then slowly stir in another 1/2 cup of heavy cream.

Then, put the pot back on the stove and heat it back up to 245°F while stirring still. Then, pour the mixture into a buttered Pyrex dish or deep cookie sheet.

Immediately afterward, add the bacon. Be sure to make it an even application!

And hey! I had some toasted almonds left over from dinner the night before, so I added those as well.

Then, let everything cool for at least 3 hours before cutting the bacon caramel into squares.

Serve it up to those without pancreatic issues and watch their eyes light up before they they begin to bounce off the walls!

Hi Ho Sweet Potato Puffs

Ingredients
81/2 C. melted butter
1 lb. 12 oz. can sweet potatoes
1 egg, separated
1/2 tsp. salt
1/4 tsp. cinnamon
6 large marshmallows
3/4 C. crushed crackers about 13

Methods/steps
Mash potatoes; beat in egg yolk, salt, cinnamon, melted butter. Scoop potatoes into 6 equal mounds. Poke a marshmallow unto the center of each mound and roll into a ball covering the marshmallow. Beat the egg white until foamy. Dip each potato ball in egg white. Roll in cracker crumbs and coat well. Bake at 350 degrees for 10 minutes or until done.

Cheesy Olive appetizers

These became popular in the '60's and are still good today. Bet you can't eat just one! Prep time includes 20 minutes of flash freezing.

55 min 40 min prep
2 cups grated cheddar cheese
1/2 cup soft butter
1 cup unsifted all-purpose flour
1/2 teaspoon salt
1/2 teaspoon paprika
1 jar stuffed green olives

1. Mix together all the ingredients except the olives.
2. It will be a thick mixture.
3. Drain at least 48 stuffed green olives.
4. Wrap approximately 1 teaspoon of the cheese mixture around each olive, to completely cover it.
5. Flash freeze covered olives at least 20 minutes.
6. Store in a freezer bag until ready to serve.
7. Bake on an ungreased cookie sheet at 400F for about 15 minutes.

Roast a butternut squash cut into 1 inch chunks using olive oil ( about 3 tblsp) After 1/2 hour add 1 sliced onion. Cooking this for a further 25 mins. In the meantime cook some Puy lentils for 25 mins, and if you want a piece of chicken or a chop or something. When it is all finished mix the lentils with the squash and onion. Serve in bowls with meat (or not) on the top. and drizzle with balsamic & more olive oil. YUMMY!!!!!!!!!!!!!!1

hiya a lovely dish and very simple and healthy i am on weight watchers and swear by this dish and tuna steak with noodles the ingrediants are

tuna steaks
teryaki marinade a lime
fresh egg noodle/beansprouts
red peppers mushrooms chillis spring onions
soy sauce and chilli p[owder

put the tuna steak s in pan and pour the teryaki marinate on the fish slice sum chillis throw them in and a squeeze of lime juice marinade 4 atleast 2 hours then cook fish in griddle pan with a bit of corriander then add peppers and mushrooms 2 wok or ppan add noodles and beansprouts then add a splash of soy sauce and some chilli powder if u like it spicy wait 4 uingrediants 2 cook then add spring onions at end (a little tip cut all vegtables in stripsit looks alot better presentation wise) put noodle on plate and tuna steak on top it really is delicious and takes about 15 mins 2 cook honestly give it a go and it will be easy 4 u to do

Teriyaki Mackeral. It's easy. Dissolve a spoon of sugar in a few spoons of soy sauce and a few spoons of Mirin and rice wine. If you have niether of those, sherry will be fine. Fry the fish in a hot pan on one side. Pour in the soy sauce mixture, turn the filet in the now boiling liquid and cook for a further two minutes. Transfer the fish to a hot plate and reduce the sauce until it is a little bit syrupy. Pour it over the fish. Basmati rice is excllent with this and so is a bunch of shredded cabbage fried in a tiny amount of sesame oil. Nutritious and delicious! And easy too!

Drain a small can of tuna and put into a bowl with sweetcorn and some low fat mayonaise. Mix altogether. Prepare a salad consisting of chopped lettuce, tomatoes, cucumber spring onion and baby spinach leaves, chopped red, green, yellow and orange peppers. Microwave a Baking potato until soft and cut open. Spread the tuna mix over the potato and serve with the salad. Very nutritional. Enjoy!

Smoked cod!

Poach a piece of smoked cod in milk (yes milk), seasoned with pepper and herbs (no salt required).

In a separate pan, wilt some spinach (you may need to add a small knob of butter or low fat spread to stop it sticking to the pan). When almost ready to serve, add a dash or two of balsamic vinegar, coarse ground black pepper and a pinch of nutmeg.

If you want to that little bit extra poach some eggs (cooked however you like them).

The finish, drain and layer the spinach, then the poached cod, then the eggs. ENJOY!

Should take no longer than 15 minutes from start to finish, AND if you are using non-stick pots will be a high fibre, high protein, low fat and low calorie meal, high in omega-3 and iron.

by "t" do you mean toddler? anyways there are LOTS of healthy foods you can make, even healthy sweet foods that taste yummy and are nutritious for your toddler or teen. you might want to concider trying "sea food" i do not mean like shellfishand such, i mean other food that comes from the sea, like algae, kelp, etc. they are full of protien, vitamins and nutriants I found some very good healthy recipes here http://healthyfamilydiets.com i tried two of the the recipes for SEA VEGETABLES because alaria is very nutritious and i wanted to know how to prepare it. I just started getting into stuff like miso seaweed kelp and algae but i am starting to feel better already! i hope this helps you out

Boiled haddock with a bit of Clover or Bertolli on it, boiled spuds and peas. To spice it up, put a little pepper on the fish.

pink kidney beans (four hundred gram tin), tin of tomatoes, oxo dice (pink meat), chilli powder all mixed jointly (0.5 for lunch and nil.5 for tea) and eat it with some low fat creme fraiche and some spaghetti cheese - ie, finely grated Grand Padano, Parmesan or Pecorino. follow with an apple or orange and also you'll be filled! genuine healthful and that i have eaten it for years and it truly works.
