Sweet potato chips.
INGREDIENTS:
2 medium sweet potatoes
ice water
oil for deep frying
salt
PREPARATION:

Peel potatoes; cut in half lengthwise then slice very thin with mandoline, slicer attachment of food processor, or knife. Place slices in a medium bowl and cover with ice water; chill for 1 hour.
Lift from water and drain on paper towels.
Heat oil to about 375° in deep fryer or about 1 inch deep in an electric skillet or deep skillet on stovetop. Fry potato slices in one-layer batches for a minute or two, or until golden brown. Lift chips out with slotted spoon and drain on paper towels. Sprinkle sweet potato chips with salt before serving.

4 medium sweet potatoes
1 teaspoon walnut oil, 1 to 2 I used canola oil
2 teaspoons onion powder
2 teaspoons garlic powder
1/2 teaspoon pepper
1/2 teaspoon chili powder or hot Hungarian paprika
Preheat oven to 450 degrees.
Scrub potatoes well and cut in 1/8 inch slices.
Coat a non-stick baking sheet with walnut oil and arrange potato slices on it.
(I needed to use a second cookie sheet).
Combine the seasonings.
Sprinkle potatoes with half of the seasonings.
Bake 10 minutes.
Using a large spatula, turn, sprinkle with remaining seasonings and bake 10 minutes more until crisp.
Serve immediately

Hi Weenie,
I am assuming you are an American. People in the USA seem besotted with the idea that EVERYTHING should be sweet! (Even, disgustingly, your sliced bread, for sandwiches, etc)
Potato Chips (crisps) were first made as savoury snacks (forget the high fat content for a moment) and were potato flavoured, with salt. Then came all the 'flavoured varieties', like beef and mustard, salt and vinegar, cheese and onion and a hundred others-including hedgehog!
Now you're suggesting 'Sweet' potato crisps?
I suppose you could use Yams (sweet potatoes) and slice them like 'normal' (whatever that means) crisps and make a kind of sweet snack, or maybe you could use normal potatoes and add honey before frying...
...you could. But why would you want to?
Sorry to sound off, you've caught me on a 'diet' week.

This is the recipe I use in my bistro
25 min 5 min prep
3 large potatoes
2 tablespoons oil
1/2 teaspoon fresh ground pepper
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon sage
1/2 teaspoon rosemary
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
Pre-heat the oven to a high temperature.
Cut the unpeeled potatoes into 1/4 inch slices.
Place the potato slices on well-greased oven trays.
Brush the potato slices with oil and a sprinkling of the pepper and herbs. (Alternatively you can combine the oil, the pepper and the herbs in a bowl and toss the potato slices in the oil/herb mixture until they are well-coated - but this would take longer.).
Bake the potato slices for about 20 minutes or until they are well-browned and crisp.
Sprinkle with combined salts and serve.

Home Fried Sweet Potatoes
Easy home fried sweet potatoes are made with cooked sliced sweet potatoes and a little sugar and butter. A great dish to use extra cooked sweet potatoes.
INGREDIENTS:
4 medium sweet potatoes
2 tablespoons vegetable oil
2 tablespoons butter
2 tablespoons sugar
dash cinnamon, optional
PREPARATION:
Boil sweet potatoes in skins until tender; slice about 1/4-inch thick. Heat oil and 2 tablespoons butter over medium heat and brown sliced sweet potatoes quickly. Sprinkle with sugar, along with cinnamon, to taste.
Serves 4.

Hi Ho Sweet Potato Puffs
Ingredients
81/2 C. melted butter
1 lb. 12 oz. can sweet potatoes
1 egg, separated
1/2 tsp. salt
1/4 tsp. cinnamon
6 large marshmallows
3/4 C. crushed crackers about 13
Methods/steps
Mash potatoes; beat in egg yolk, salt, cinnamon, melted butter. Scoop potatoes into 6 equal mounds. Poke a marshmallow unto the center of each mound and roll into a ball covering the marshmallow. Beat the egg white until foamy. Dip each potato ball in egg white. Roll in cracker crumbs and coat well. Bake at 350 degrees for 10 minutes or until done.

Preheat the oven to 400 degrees F (200 degrees C).
Place the cut sweet potatoes into a microwave-safe dish with the water. Cook on in the microwave for 5 minutes on full power. Drain off liquid, and toss with Italian seasoning, lemon pepper, salt, pepper, and olive oil. Arrange fries on a baking sheet in a single layer.
Bake for 30 minutes, turning once, or until fries are crispy on the outside.
