Beef falls under the "red meat" category along with most other mamals.
Chicken is or other poultry is "white meat" except osterich which is "red" but is also one of the few that are cholesterol free.

Yes, beef is red meet. Lamb is also read meat. Poultry are white meat. I'm not sure but maybe it's because when they're cooked they have this distinct color.
