http://vegetariantimes.com/ has great recipes and hints. You can make veggie sandwiches for lunch... use lettuce, cheese, cucumber, avacado, sprouts, etc. It's quite good. I think there's a website called vegweb, too, that has recipes.

Put peanut butter sandwiches in his lunch or but some of those small tuna salad at the grocery store. How about a cheese sandwich or an onion sandwich? As for recipes just make you regular foods leaving out the meat and substituting more veggies.

I don't know where your location is, but if you have trader-joes in your area that is the store you can get all the veg food. Hummus is a great stuff to have, but go and check out that store they can also give you good tips. I usually google for recipes!

ah well since he hasn't gone completely vegan it should be pretty easy to find stuff for him to eat.

if your looking for stuff already cooked up maybe go to
your closest walmart.. or grocery store and look for Morning star brands (http://www.seeveggiesdifferently.com)

Or try boca.

But, if your looking for something to make up from scratch
Just google some vegetarian recipe sites I will list some for you below.

Buy veggies and make your own subs with lots of
veggies.. mmm they are delicious.

Going vegetarian is a very healthy choice.

Also be sure he takes a multivitamin supliment.. Which everyone should take anways.

Good luck with him meals =]
