I loooooooove cheese! I think my favorite would be rochefort, but I'm also partial to bleu cheese.
Oh, and cheddar, and American, and meunster, and Colby Jack, and Monterey Jack..... the list goes on and on.
Except for swiss... I don't like swiss cheese.

I love cheese, and it would be hard to pick a favorite, but baked brie with crackers is wonderful as well as aged cheddar. Can't imagine life without blue cheese dressing on a salad, or risotto without parmesean. Can't eat a bagel without cream cheese or a hamburger without slice or two of good old Land 'O Lakes American cheese. Can you even consider chicken enchiladas without Montery Jack? There is no end to how wonderful cheese is ...Greek salad with feta cheese, boursin on crackers with some nice crisp Reisling on a summer afternoon...

Gruyere is a favorite of mine. It goes well in a lot of things and has a nice swisscheese style flavor to it. A good smoked chedder is good, too.

Has to be Longhorn Colby, any other colby is just cheese. Longhorn is the best!

It's a toss up between a mountain gorgonzola or a spring parmigiano reggiano.
