I am wondering what collagen disease is, what the signs and symptoms are and what possible treatments are available....

There are many kinds of collagen diseases, with most involving degeneration or inflammation of some variety -- but most are also secondary to some other kind of injury or disease. If you're talking about genetically-related, primary collagen disorders, Ehlers-Danlos syndrome is probably the most well-known. It is characterized by excessively flexible joints that tend to dislocate, as well as hyperelastic, fragile skin. A sunken chest and/or scoliosis may also be seen. There is no cure to Ehlers-Danlos, and therapy is only supportive.
