These work for us:
1 cup flour, 1tbsp. sugar, 2 tbsp. baking powder, 1/4 tsp. salt, 1 beaten egg, 1 cup milk, 2 tbsp. cooking oil.
We also add some shredded carrots (5-6 baby carrots).
Heat up a skillet and voila.

A recipe handed down from my grandmother for Fluffy Best Pancakes: 2 cups all purpose flour
4 tsp baking powder
2 tsp salt
Add: 2 cups cold milk (whole is best)
2 egg yolks set aside
Beat 2 egg whites until fluffy (stiff peaks) and Fold gently into batter. Spray pan with cooking spray between each set of pancakes to prevent sticking. Fry until bubbles pop, flip and cook about one minute more. These will fluff up. they absorb syrup quickly so be careful not to put to much on. (This recipe can also be used to pour into a waffle iron.)
