Beef Stroganoff Recipe
Ingredients

6 Tbsp butter
1 pound of top sirloin or tenderloin, cut thin into 1-inch wide by 2 1/2-inch long strips
1/3 cup chopped shallots (can substitute onions)
1/2 pound cremini mushrooms, sliced
Salt to taste
Pepper to taste
1/8 teaspoon nutmeg
1/2 teaspoon of dry tarragon or 2 teaspoons of chopped fresh tarragon
1 cup of sour cream at room temperature


Method

1 Melt 3 Tbsp of butter in a large skillet on medium heat. Increase the heat to high/med-high and add the strips of beef. You want to cook the beef quickly, browning on each side, so the temp needs to be high enough to brown the beef, but not so high as to burn the butter. You may need to work in batches. While cooking the beef, sprinkle with some salt and pepper. When both sides are browned, remove the beef to a bowl and set aside.

2 In the same pan, reduce the heat to medium and add the shallots. Cook the shallots for a minute or two, allowing them to soak up any meat drippings. Remove the shallots to the same bowl as the meat and set aside.

3 In the same pan, melt another 3 Tbsp of butter. Increase heat to medium high and add the mushrooms. Cook, stirring occasionally for about 4 minutes. While cooking, sprinkle the nutmeg and the tarragon on the mushrooms.

4 Reduce the heat to low and add the sour cream to the mushrooms. You may want to add a tablespoon or two of water to thin the sauce (or not). Mix in the sour cream thoroughly. Do not let it come to a simmer or boil or the sour cream will curdle. Stir in the beef and shallots. Add salt and pepper to taste.

Serve immediately over egg noodles, fettucine, potatoes, or rice.

Serves 4.

Stroganoff- is a very simple dish.
My recipe follows: 1lb of beef rump cut into strips, 1 onion finely sliced, 1 garlic clove smashed, a handful of mushrooms quartered, 2 fingers of brandy, about 100ml beef stock, 50ml double cream. ( liquid quantities might need to be varied).
Sweat down the onion in some butter, add mushrooms and cook for 2/3 mins. Remove from pan. Wipe pan out heat up high with a splash of oil still smoking- add rump steak. When browned all over- keep moving the beef, add brandy and flambe. Add some stock, add onions/mushrooms back, cook for 2/3 mins, season and finish with cream and chopped parsley. Adjust seasoning.
Serve with buttered noodles, tagliatelle or rice.

It's spelled stroganoff. Get some lean beef, like sirloin. Cut into strips. Brown off with sliced onions and mushrooms, garlic and basil. Add beef broth and simmer until beef is tender - at least an hour. Then thicken with a flour/water mixture. Some people add a bit of sour cream at the end. Serve over noodles.

Brown 1 lb. beef with 1/2 cup chopped onion.Drain.Stir in 10 -12 oz.mushroom steak sauce,small can sliced mushrooms,2 teaspoons worcestershire sauce,1/2 teaspoon salt and 1/8 teaspoon pepper.Simmer 10 min.Add 1/4 cup sour cream.Only heat through,do not boil.Serve on rice or noodles.

i do mine in the crock pot very easy

pack of stew beef
pack mushrooms sliced
2 large cans of cream of mushroom soup
1 16 oz sour cream
1 onion (optional)
salt pepper

mix first three and cook about 8 hours

then 1/2 hour before serving add the sour cream

serve over noodle or rice

BEEF STROGANOFF

Saute ONIONS and GARLIC in OIL
Drop BEEF SLICES and saute for 2 minutes
Add MUSHROOMS
Pour 1 cup SOUR CREAM
Add 2 tbsp. TOMATO PASTE
Add LIQUID from MUSHROOMS
SALT and PEPPER to taste
SIMMER until cooked
