It is a sweetish clear sauce that goes well with fish.

Sweet Chilli Sauce
ingridents
3 tablespoons hot ground chili paste
2 teaspoons minced garlic
1/2 cup rice wine vinegar
2/3 cup water
2/3 cup sugar
1 teaspoon salt
4 teaspoons cornstarch
4 tablespoons chopped cilantro

Method

1.Combine everything, except cilantro, in a small sauce pan and mix.
2.Once blended, bring to a boil, reduce heat and simmer about 5 minutes.
3.Remove from heat and stir in cliantro

Heres a good recipe: 4 long red chillies, 2 cloves of garlic, 20 mls fish sauce, 100 grams of castor sugar, 100mls vinegar, 100 mls water. Pound garlic and chilli in a mortar and pestle or use a food processor. Add all the ingredients into a small size saucepan, bring to the boil and reduce until a syrup consistency. Bottle when cold in a sterilised bottle.

Sweet Chilli Sauce

5 tbsp. white vinegar
3 tsp. red chili flakes
8 cloves garlic
Pinch of salt
2 fresh red chili peppers, seeded and sliced
1 c. whole canned tomatoes (with juice)
12 oz. Red Plum jam
9 oz. pineapple juice
4 tbsp. apple juice concentrate

Place the first 7 ingredients in a food processor or blender and blend to an even consistency. This will take several minutes and require stopping occasionally to scrape down the sides.
Place the remaining ingredients in a saucepan over medium heat. Pour the blended ingredients in the saucepan. While stirring, let this mixture come to a boil. Reduce heat to simmer and cook for 20 more minutes.

Store in air-tight, sterilized jars. It will keep for at least 2 months, refrigerated.

Yield: 3 1/2 cups.

4. Place in the pocket for about 5 mins as you walk home.

SWEET CHILI SAUCE

24 average size tomatoes
8 lg. onions
4 green bell peppers
2 c. sugar
2 c. vinegar
4 tsp. salt
2 tsp. cinnamon
1 tsp. allspice
1 tsp. cloves
1/4 tsp. cayenne pepper

Scald, peel and mash tomatoes. Scald and peel onions. (Chop small onions and peppers.) Make a spice bag out of cheese cloth and add whole spices of cinnamon, allspice, cloves and pepper. You can simply add ground spices but add 3/4 the amount listed. Add sugar, vinegar and salt. Cook slowly about 3 hours, stirring often until thickened. Remove spice bag. Boiling water bath in pint jars 20 minutes. Makes 8 to 10 pints.

caramelize honey (or sugar) and douse with rice vinegar before the honey is burnt. Add chillies when the honey/vinegar has cooled down, crush. Add soy sauce if you wish... that is a fast one...

I use it on alot of dishes, roll ups with pork or shrimp wonton, in Ramen soups for spice...grilled chops or burgers,roasts. The possiblities are endless really.....
