Bake it with some Parmesan cheese and bread crumbs. It gives it a nice crust on top.

Do a three cheese mac & cheese.
I use english cheedar, red leicester and a bit of mozzorela...(I know that is not spelt correctly).
Cook the Maccaroni drain, add some mixed dried herbs, not too much and some black pepper and mix in the three cheeses. Slice tomatoe on top and grille for about 5-8 minutes. I usually leave to set a bit for say 20 minutes, serve....lovely....oh im soo hungry now.

Italian or Mexican diced tomatoes. Add 2-3 different types of cheeses like sharp cheddar, pepper jack. Also, I have had it with cream cheese mixed in as well. It was quite good. You could also use Velveeta for a smoother texture. Bacon bits, broccoli and topping it with bread crumbs is another suggestion.

one of my favorites is mac and cheese with tomatoes

1/2 cup butter
12 oz macaroni
14 oz can tomatoes, fresh if you have them
1 tbl flour
1 1/4 cup milk
1/2 pound shredded cheese (please do not use velveta, or any other processed cheese product)

In 2 quart or larger saucepan, melt butter, add macaroni and tomatoes. Cook, stirring for 5 min. Add 1 1/2 cups water and bring to a boil. Cover and simmer for 10 min, till tender. Add flour and stir. Stir in milk and cheese and simmer 3 min or till cheese is melted.

Try making it with mushroom soup, instead of cheese sauce - it's delicious! And you could chop some frankfurter style sausages into it for an extra bit of flavour and texture.

make a nice cheese sauce add bacon or ham mushrooms, onion and maybe some sweetcorn,season well cook all ingredients and pop in over with some cheese and crisp topping serve with crusty bread and salad
