Hi,

This is absolutely beautiful. It is a recipe for a club sandwich (although the film title is wrong!). Watch the video on the website for a visual guide from a professional chef to learn how to do it properly.

You Will Need

1 ½ Tbsp olive oil
1 medium chicken fillet
sea salt
freshly ground black pepper
2 large thick slices of bread
½ medium avocado, peeled and chopped
1 Tbsp mayonnaise
1 medium bunch of rocket
2 rashers of bacon
½ tomato, sliced
½ lemon - juiced
1 handful potato chips
1 chopping board
1 frying pan
1 slice
1 sharp knife
1 food processor
1 serving plate

Step 1: Cook the chicken

Heat the oil in a frying pan over a high heat. Place the chicken in the pan, season with salt and pepper and cook for 3 minutes. Turn over and cook for a further 3 minutes.

Step 2: Slice the chicken breast

When the chicken breasts are cooked, remove from the pan and cut into 1cm slices. Leave to rest.

Step 3: Make the mayonnaise

Place the avocado, lemon juice, salt, pepper and mayonnaise into the food processor and process until smooth. Place in a bowl and keep on one side.

Step 4: Make the sandwich

Spread a spoonful of avocado mayonnaise on a slice of bread, top with a handful of rocket salad, then chicken, bacon and sliced tomato. Finish with another spoonful of the mayonnaise and place the remaining slice of bread on top.

Step 5: Serve

Cut the sandwich in half and serve garnished with salad and potato chips.

Enjoy!!

The classic club sandwich is:

Three slices of toasted white or wheat bread
Mayonnaise
Lettuce
Sliced tomato
Crisp bacon
Sliced turkey
Swiss cheese

Lay one slice of toast on a plate. Spread mayonnaise thinly on the toast. Layer lettuce, sliced tomato, and bacon slices on mayo. Top with second slice of toast. Spread another thin layer of mayonnaise. Layer turkey and cheese on top of mayonnaise. Cover with third slice of toast.

Poke four sandwich picks (like toothpicks but longer and usually have frilly cellophane bits on one end) into sandwich at 12 o'clock, 3, 6, and 9 o'clock. Cut on the diagonal so that you have four little triangles with picks firmly in the centers.

Club Sandwich Salad

1 cup mayonnaise (lowfat or fat-free is okay)
1/4 cup ketchup
1 teaspoon chopped green onions
salt and pepper
1 head iceberg lettuce, torn into bite sized pieces
2 large tomatoes, cut into wedges
2 hard-boiled eggs, chopped
10 slices bacon, cooked and crumbled (I use turkey bacon)
2 cups cubed, cooked chickens or turkey
croutons

Combine mayonnaise, ketchup, onion, salt and pepper in small bowl.
Mix well.
Cover and refrigerate.
When ready to serve salad, mix remaining ingredients in large bowl.
Add croutons.
Drizzle with dressing.

Special Club Sandwich

12 slices bread, toasted
Miracle Whip or Miracle Whip light
2 slices sharp cheddar cheese, cut in half
1 (6 ounce) package thin sliced roast chicken breasts
lettuce
2 slices swiss cheese, cut in half
8 slices tomatoes
12 slices bacon, crisply cooked

For each sandwich, spread 3 toast slices with dressing.
Cover 1 toast slice with cheddar cheese, chicken, lettuce and second toast slice.
Top with swiss cheese, tomato, bacon and third toast slice.
Cut into quarters, secure with toothpicks.
