Yes you are right the fish will pounce on the milk hence after fish we should not drink milk.

My Mom said you couldn't eat cherries and milk.. until they came out with an ice cream with cherries in it. I have drank milk with fish dinners when I was a child.. guess that 'tale' never got to my Mom.

I could see a potential clash on the palette, but I don't think it will kill you.Many restaurants serve salmon alfredo or salvia, made with a cream and butter sauce.

No idea. It's perfectly OK to poach fish in milk. It wouldn't occur to me to have milk with my dinner, though.
