i want to do a whole pancake meal; i have the sweet sorted but need ideas for the main course.

Hi,

This is absolutely beautiful. It is a spring onion pancake with salmon. Watch the video on the website for a visual guide from a professional chef to learn how to do it properly.

You Will Need

2 eggs
250 milk
40 g butter, melted and cooled
120 g flour
2 ½ tsp baking powder
½ tsp salt
50 g spring onions, sliced
1 bunch of baby spinach
16 slices of marinated salmon
1 piece of cucumber
1 Tbsp mayonnaise
1 bowl
1 whisk
1 sieve
1 frying pan
1 ladle
1 serving plate

Step 1: Mix eggs

Place the eggs, milk and melted butter in a bowl and whisk until combined.

Step 2: Make batter

Sift the flour, baking powder and salt into a separate bowl. Make a well in the centre, gradually add egg mixture and beat until smooth. Allow to rest for 2 hours.

Step 3: Cook pancakes

Heat the frying pan and ladle 3 tablespoons of batter into the pan. Sprinkle 1 tablespoon of spring onions over the pancake. Cook for about 2 minutes until bubbles appear on the surface of the pancake. Turn the pancake over and cook on the other side. Transfer to a plate.

Step 4: Peel cucumber

With a potato peeler, slice long ways along the cucumber until you have a few ribbons or strips.

Step 5: Serve

Place a pancake on each plate, top with a handful of baby spinach, 4 slices of salmon and a pile of cucumber ribbons. Finish with a spoon full of mayonnaise.

Chicken Style Pancakes

Ingredients

pancakes
chicken style strips
1 small onion
1 tsp sun dried tomato paste
1 tsp tomato paste
2 large mushroom
1 tsp paprika
1 tsp boullion powder
mayonnaise

To make the sauce finely chop the onion and mushroom and gently fry in some olive oil. Once the onion is transparent add the paprika and boullion powder and the tomato paste. Cook gently and add salt if necessary.

Fry the chicken style strips until ready.

Turn both the sauce and the strips down to minimum while you cook the pancakes.

When each one is cooked fill with a layer of mayonnaise, then some of the sauce and lastly a couple of the chicken style strips. Wrap up and keep warm in the oven if you are cooking a large batch.

APPLE - CRANBERRY FILLED PANCAKE PUFF CRUST: 1/2 c. water 1/4 c. butter 2 eggs 1/2 c. buttermilk complete pancake and waffle mix FILLING: 2 tart cooking apples, cut in thin wedges 2 tbsp. butter 1/2 c. syrup 1/2 c. fresh cranberries or 1/4 c. raisins 1/3 c. pecans, chopped 1/2 tsp. cinnamon (optional) 1/8 tsp. nutmeg (optional) Preheat oven to 400 degrees. Generously grease a 9 inch glass pie plate. Bring water and butter to a boil in medium saucepan. Add pancake mix, stir until mixture leaves sides of pan and forms a ball. Remove from heat. Add eggs, one at a time, beating well after each addition. Spread batter evenly onto bottom and sides of pie plate. Bake 17-19 minutes or until golden brown. Fill immediately with apple-cranberry (or raisin) filling and cut into wedges to serve. Makes 4 servings.

Try mincemeat and grated cheese. Or, like a Chinese Yuk Sung, pork mince with shredded lettuce. MMm mmm, now where's that frying pan? But don't forget girls - a second on the lips, a lifetime on the hips..... And not forgetting the tradition of Shrove Tuesday - it's the start of Lent. So what are you gonna give up for the next 40 days???

A chinese stir-fry is the best:

First brush the pancakes with a sweet & sour sauce and then stir-fry a mixture if marinated shredded chicken ( or any meat of your choice), shredded crunchy cabbage, strips of bell peppers, scramble eggs, chopped mushrooms. Add some flavourings and place on pancakes, roll and serve.

Leek and Cream cheese pancakes - YUM
Salmon and dill - also yum
Crispy duck and plum sauce with shredded lettuce and spring onion - you have to make really thin pancakes though!

definitely chicken and mushroom pie-filling (without the pastry obviously!). Make some chicken gravy, add chopped cooked chicken, mushrooms, a bit of stuffing mix, cook it up, and serve in the pancakes - it's yum!

pizza - normal pizza stuff cheese tomato etc

either on top or make a calzone style pancake

another nice filling was chicken and mushroom, and the pancakes were shaped like cannaloni you the briefly grill them after sprinkiling cheese on top
