Any one got a good suggestion/receipe for a pudding? I am not that good a cook so nothing too horrendously difficult! Ideally something that can be done a bit in advance. Dinner is going to be braised beef in red wine so maybe something light for afters? Boyfriends family visit....help!

#You could always simply get some lovely fruits and make a fruit salad to serve with cream and ice cream- couldn't be simpler, and definately a light option.

Well you could try doing pears with a chocolate topping. You peel the pears but don't take the core out..leave the top on. Get some red currant jelly or blackcurrant jelly and put it in a saucepan with some red wine and caster sugar so that the liquid will just cover the pears when you put them in. Cover with a lid and bring to the boil..not too long or the pears will go mushy..by this time the pears should be a light red colour. Lift the pears out by the stem and put the pears in some nice glass dish and then melt some chocolate in a bowl over boiling water..drizzle this over the pears and serve with a little clotted cream. Make sure you use good quality dark chocolate. Most men love dark chocolate. You could even serve with a little ice cream. I have made this often for friends..it's easy and always goes down well and it looks good too.

Really easy, but looks impressive. Get some mixed fruits and berries (Strawberries, raspberries, blackcurrants, blackberries etc) and place them in a shallow dish. Cover with granulated sugar and cook in a medium oven until they are cooked (Soft) and there is plenty of sauce. There is no set time for this, just keep checking
Spoon this mixture over meringue shells/cases (M+S do nice ones) and serve with a scoop of whipped cream or ice cream. Hardly any preparation, but it looks like you've spent ages on it!! It is dead light after a good main course. Good luck

INGREDIENTS
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/3 cup vegetable oil
1/2 cup boiling water
2 cups white sugar
2 eggs
1/3 cup vegetable oil
1 1/3 cups all-purpose flour
1 teaspoon vanilla extract
1/4 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
In a large bowl, stir together the cocoa and baking soda. Add 1/3 cup vegetable oil and boiling water. Mix until well blended and thickened. Stir in the sugar, eggs, and remaining 1/3 cup oil. Finally, add the flour, vanilla and salt; mix just until all of the flour is absorbed. Spread evenly into the prepared pan.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the cake comes out clean. Allow to cool before cutting into squares.

Cheesecake is the easiest thing, and you can do it all in advance. Also, can suit your taste as so many different flavours & fillings.
A simple recipe for cheescake is:

Base
Your favourite biscuits (shortbread, ginger nuts, digestives, choc covered...) Crushed in a freezer bag with a rolling pin
Melted butter
Sugar (depending on the sweetness of the biscuits)
Mix, push into a greased tin & put in fridge to set

Creamy bit
Cream cheese (can be marscapone, ricotta, philidelphia...)
sugar
milk/cream
And whatever flavour you want, ie vanilla pod, white choc, dark choc, lemon etc
Mix it all up, spoon onto the top & allow to cool

How about a lovely summer pudding; there's loads of recipes out there, but essentially its various berries of your choice (fresh or frozen), e.g strawberries, raspberries, blueberries, etc. Line a bowl with white bread, put all your fruit inside, then seal the top (which will become the bottom when you turn it out) with another slice, so you have a fruit pie, with bread instead of pasty. The fruit juices run into the bread - serve with cream - mmmn mmm mmmmm!! Its really simple but gorgeous!!

I have made this one thousand times, its fantastic and everyone will ask you for the recipe. Its SO easy too.

2 packets of choc chip cookies
a little sherry or brandy whichever you prefer
fresh whipped cream
.

dip each biscuit into the sherry just for one second, then a blob of fresh cream....keep doing this until they are all sandwiched together.
whatever cream is left over spread it on the top, you can keep a biscuit to crumble on the top. pop it in the fridge and serve.

its so delish.

takes about 5 minutes to make

Combine two of the ideas already given and serve crepes with fresh fruit (berries would be nice and you can sometimes buy bags of frozen berry that defrost in a pool of gorgeous juice!) and icecream!! Personally, I'd sweeten the fruit and use creme fraiche, or sour cream, for the contrasty flavours...

Eton Mess

Chop enough strawberries for the amount of people eating, I usually just half them.

Whip enough cream for the amount of people eating.

Crumble up about 6-8 meringue nests.

Mix it altogether and serve, it's YUM!!!! You may want to sweeten the berries and cream. You can use different berries if strawberries are not available.

I would make pineapple brulee

Buy 2 tins of crushed pineapple and drain
whip approx a halfpint of double cream until it slightly thickens and then stir in half a pint of greek yoghurt
Place the pineapple in your serving dish, pour the creamy mix on top and sprinkle some soft dark brown sugar on top, this will then melt.

This dish is delish! And very easy!
