I love cooking beans for my family and they love it too but the gas that we suffer from after eating beans is too much of a punishment. My friends have suggested adding some baking soda so the beans while cooking but that didn't work, another one suggested draining the first boiling water when cooking...I don't think that is a good idea as to me it means I would be removing some of the nutrients of te beans. Please advise/assist.

What causes the gas is a carbohydrate that you can not digest. The best way to reduce it is to boil your uncooked beans for 1 minute then allow it to soak for an hour. Then you drain and cook normally. This reduces that nasty carb by 42.5%. However I understand that beans made in this way aren't as tasty.

The runner-up method is to soak them overnight, drain, and then cook normally. This removes 28%.

They also tested epazote, kombu, bay leaves, and baking soda and saw no results, but they admit that "it is possible that they act only during digestion."

What causes gas is the fermentation that beans go through - so try and reduce the risk of fermentation all the way through.
Start by buying fresh beans (don't store them in your cupboard for too long).
Wash them and soak them for a couple of hours at room temperature first, then in your fridge overnight.
Return to room temperature before adding room temperature water.
Add several bay leaves, boil, then simmer. 15 minutes before done, add several garlic cloves. Continue boiling 15 minutes, then switch off.
Cool to room temp, then drain and remove garlic and bay leaves.
Only now you can add salt.
At this stage, keep chilled till you are ready to use the beans in your recipe, or use right away.
Any leftover should be re-heated by boiling at high temp again, to arrest the fermentation.
Don't keep longer than one day after that.

The active ingredient in Beano and Gas X is symethecone. It will help.
I've also heard of freezing them in the water overnight.
Tossing the first water will not waste too many nutrients.
May be your family needs to walk after dinner. Might help break up the gas. At least it will get it out of the house.

Use Bean-o

the best beans are the ones double cooked -(pinto, or black)
cook the first time - let cool - refirgerate overnight
then cook a second time - mmmmmmmMMMMMMmmmmm

A pinch of asafoetida is supposed to counteract the effects of beans. Asafoetida is a spice used in Indian cooking, it has a slight garlicky flavour. You need to be very careful only to use a tiny amount and beware as before it is cooked it smells dreadful.

Somebody at work told me that no matter what beans you use, canned or dried, if you rinse them thoroughly before you cook them it makes a person not have gas. Not sure if it works. I only found this out last week.

I do not know. However, if your family enjoy eating beans I would suggest eating them slowly - with the windows and doors wide open, and then go for a good brisk walk, expelling the gas with every stride.

while soaking , the beans ,add one tsp. of baking soda and water. then when your ready to cook them,drain of water ,rinse, add water to cover the bean and cooking them,till the consistency,you like.

Eat them more often, if it's a regular routine in your diet to have beans your body will get used to them and settle down, in other words no more flatulence.
