If I'm in NYC and I want to get to 120 E 31st St, how do I word that so that the taxi driver takes me to the right place? I don't want to say it wrong and end up lost somewhere.

Despite their reputation, most cab drivers in NYC are pretty decent and will get you where you want to go safely. However, if they know you're from out of town, they will most likely try to pad the fare just a little bit.
There is no way the driver will know the address number, so it's a good idea to know the cross streets. To get to the address you give, tell him you're going to 31st. between Park and Lexington.
Another thing to remember is to hail a cab in the direction you're headed. NY is really just a big grid, with the traffic moving like a pac man screen. For instance, if you are uptown, get the cab on Lexington, since it travels south towards 31st. If you are below 31st. get a cab headed uptown. Hailing in the wrong direction is will cost you in time and money, and is an invitation to cab drivers to take the "scenic" route.
NY is a big city, but it's really a marvel of civil engineering and surprisingly easy to navigate. All the streets are conveniently numbered, so just do the math to your location. Downtown is a little trickier, but not impossible to figure out.
Cabs can really add up, and the traffic is a nightmare. The subway is really the way to go, most of the time. It is a great system- cheap, easy, reliable and quick. Everyone takes the subway in NY, from minimum wage laborers to the wealthiest celebrities. But if you're unsure or uneasy in an area you don't know, grab a cab. Like I said, they will get you where you're going safely.
Enjoy NY, it really is the greatest city in the world!!
