don't gut out the inner portion. and yes, leave it out at room temp. and when you press on it, to see if it's ripe or not, make sure to press on the very top, so as not to bruise it. avocados bruise very easily. as for ways to eat it, hell, make some guacamole

Avocado's are stored on the counter in a dish... It won't for sure be ripe after two days... but a way to tell is to squeeze it a little bit and if it's just a little bit mushy... than it will hopefully be good!
Avocado's are good sliced up with lemon sprinkled over them, and put on a burger.
They also taste wonderful as guacamole... I don't have an exact recipe, but here's some instructions...
1. Cut the avocado's in half, pull the pits out with a spoon and put them in a bowl.
2. Mush them.
3. add some lemon.
4. add some white pepper.
5. add some regular salt.
6. add some diced tomato's.
7. add some jalapenos.
And just keep adding until it tastes right... I'm so sorry I don't have more up to date instructions! But good luck!

If it is soft and ready for eating, you can put it in the fridge..this will slow the ripening process from going any further... if it is not, you can leave it in a dish or in a brown paper bag like you would bananas.. If the avocado is rock hard, it could take up to a week to 10 days to soften.
We eat a lot of avocados

Sushi! Or sliced in southwestern style sandwiches. Or of course guacamole.
Keep it in a pantry environment, away from other fruits / veggies, as cool as possible and dark. I can't guarantee this, but I've heard if you store an avocado with its pit, even if you've sliced it, mashed it, etc, it'll keep a little bit longer. Of course once you've taken the meat out of the avocado you'll want to refrigerate it.

If you gut out the inner portion, add some lemon juice, store it in tupperware and put it in the lowest part of the refridgerator, it'll last longer...

in case you have already shrink it and a few left over...squeese some lemon juice top on it. It stops the friut from growing to be to be brown. additionally the less you shrink into the avacado, the less it is going to turn brown

when you store avocado in the fridge it will loose its taste (just like tomato's).
if your avocado is not ripe yet, put it in a newspaper in a plastic bag and in a warm and dark closet ... after 2-3 days it will be ready.
i like making a small salad with avocado, tomato's, spinach, nuts, oranges and sprouts with a lemon/mustard/olive oil dressing.

The avocado is ripe if you press on it and it is slightly soft. Leave it at room temperature until this happens.
