I'd like to be able to keep some from my garden to use in the winter, but I have no idea how. Dehydrator?

Porterhouse, if you ever want something really stinky, pickle some German Beer Radishes or Spanish Black Radishes. It's the only thing that will cut through the cigarette smoke at our hunting shack. LOL

I think pickling would be the most effective way to preserve them. Freezing will cause them to be undesirable when thawed as they (radishes) are 90% water.... if you can IQF Freeze (individually quick frozen) which most people are unable to in their home due to the extreme low temperature required... that would have been a possible option. I haven't heard of dehydrating them, that might work, not sure what the end result would be.

Pickled beets, pickled radishes and other fresh pickled garden vegetables are always delicious, especially when you can break them out in the winter and remind yourself of the summer.

I've never seen them in any form other than fresh. That leads me to believe that they don't taste so great when you change their natural state. But I guess a small experiment wouldn't harm anyone. Why don' you try, my guess is that they would be very hot & spicy if dehydrated.

they will definately lose their crunch if you freeze, then thaw them...i would advise against it
