I would make a homemade chicken parmesean. It's very easy. Just pound some chicken breasts until their pretty thin. Lightly coat them in bread crumbs and pan fry in a little olive oil. Afterwards, cover them with some spagetti sauce & mozz. cheese and bake it in the oven until the cheese is bubbling.
Serve with pasta, a green salad and a nice bottle of red wine. Romantic, savory and healthy.
And if he hasn't been home for a month, I think YOU should be dessert! LOL

We had a few weeks of total and utter disaster, the house was in bad shape (clothes not put away, kitchen was a mess etc) We did the whole entire house during a weekend so everything was done, clean, organized so forth.... I find it MUCH easier to start the week with a clean organized house, then during their nap I tidy (not clean) the toys, kitchen etc. At night when they go to bed I do a clean up which usually take 20-30 minutes. But then I have the rest of the night to relax. At this time you should plan a week of meals, for me it is easier to plan meals that can be eaten for dinner then the next day for lunch as well, I often make double so I can freeze some for a day where I don't want to cook so usually I have 5-7 frozen meals in the freezer often. Examples of easy frozen meals to double.... Chicken Soup, Beef Barley, Spagetti, Casseroles, Pot pies, etc I usually start preparing dinner (cutting, pealing, etc) in the morning and through out the day and just put it aside until I'm ready and that way if the kids interrupt me I can stop then come back to it later. I also find making some finger foods and freezing them helps alot! Meatballs is an awesome one! I cook a big batch of them about 150 meatballs at once freeze them and whenever I'm running late or don't have much to make for lunch or something I heat them up for a minute and feed the kids! Making a big batch of pancakes and freezing them is also helpful for mornings where I'd rather not fry and egg if they are too fussy, stick it in the toaster and be done.... And even if dinner ends up being ready early in the afternoon at least it's done... Now, question, do you have a Dishwasher? When I didn't have one I found it very difficult to keep up but now having a diswasher it is amazingly easier! It might take a couple weeks to get a routine but try it out, Go buy a ton of veggies and ground beef and what not and spend the evenings and weekends making things, double up the easy ones, It's fun to do after the kids are in bed just for couple time and chatting and being together! One word... steak. Get a porterhouse, choice cut not select, at least 1.5 inches thick. Try a buthcer. Broil, and serve with spinach and a baked potato lots of butter and sour cream. Wine or beer whichever his preference.
