no idea about costa rica or panama. in bolivia they use a lot of quinoa (pronounced keen-wa) this is a high protein grain that is used widely in cooking. last time i was in bolivia i ate lots of soup - it appeared to be on every menu - local or tourist. all freshly made - yum!
coca leaves are also used - to make tea, chewed by themselves, or in processed foods such as sweets (candy)
