Watalappan is Coconut Custard not Caramel Pudding tho....

Caramel Pudding

1 cup flour
1 cup raisins
1/4 cup sugar
2 teaspoons baking powder
1/2 cup milk
1 cup brown sugar
1 tablespoon butter
1 1/2 cups boiling water

Mix the flour, raisins, 1/4 cup sugar, baking powder and milk
together. Put in baking dish. Bring brown sugar, butter and water to
a rolling boil. Pour this mixture over the batter, and bake in a 375°
oven for 1/2 hour. Serve hot.


Watalappan
2 cups Thick Coconut Milk
1/2 lb Brown Sugar
4 Eggs
Pinch Cardamoms (Optional)
3 Cloves (Optional)
Raisins, Cashew

Beat the eggs in a mixer.
* Add the coconut milk, brown sugar cardamoms and cloves to the beaten eggs mix well.
* Add the mixture into a pot and steam for 20 minutes. Add raisins.
* Altrenatively the mixture can be added into multiple small aluminum
bakimg foils and then steamed.
* The time required for steaming is about 5-10 minutes for this method.

Sri Lanka Watalappan - Spiced Coconut Custard
5 Eggs
250 g Jaggery (sweetener made by the concentration of sugarcane juice)
250 ml Coconut milk, thick
150 ml -water
pn Cardamom powder
pn Cinnamon, ground
pn Nutmeg powder
1/4 ts Rose essence
50 g Cashew nuts

Lightly beat the eggs. Mix the jaggery and water and boil until the jaggery has melted. Allow to cool. Add melted jaggery and coconut milk a little at a time to the eggs and continue to beat.-Add the powdered cloves, cardamom, cinnamon, nutmeg and rose essence and pour into a greased bowl. Cover with grease proof paper and steam for 1-1/2 hours. Sprinkle with cashew nuts before or after steaming.

Wattilappam

10 eggs
2 1/2 cups thick coconut milk
1 lb jaggery
1 pinch cinnamon
1 pinch nutmeg
1 pinch salt
1/2 teaspoon cardamom
2 cups chopped cashews

Beat the eggs well.
Grate the jaggery and mix with the egg batter.
Add all the other ingredients and mix well.
Pour the mix into a greased bowl.
Cover with oil paper & steam for 1 1/4 hours
Let it cool in the container before serving.
Sprinkle some chopped cashews for added taste and decoration.
