I found this old box of brownie mix in my cuboard, and I thought I would make it. The caramel is a little old, so I warmed it up to soften it. I put the brownies in the oven, then think to look on the box for a best before date. Turns out, its dated March 1, 2003. Is it still going to be good (and safe) to eat?

Cake mixes and brownie mixes can go bad with age -- generally over a year. They won't be harmful, but they probably won't turn out too good. A few things happen with these products after a year.

1) there is a chance that there will be insects in there. All flour can contain tiny insect eggs, depending on how the flour was treated at the manufacturer of the mix. The insects can hatch and lay eggs, if they are there.

2) The leavening system (like baking soda, baking powder, or a number of other baking chemicals) has a shelf life of about a year. After that time, the cake or brownies will not rise properly when they are baked, leaving you with a much denser brownie -- and much "flatter."

3) The flavors that are added to the mix will go flat. Even the cocoa will lose much of it's flavor.

4) All mixes like this have a fair amount of fat or shortening in them. The cocoa alone is 12% fat. After a year, this fat will go rancid. In a cake mix, this will tend to taste "soapy." In a brownie bix, chances are the chocolate flavor will overpower the rancid taste, but if the cocoa fat has also gone rancid, you will taste it.

I wouldn't take a chance. There was a story on the news a while back about mold growing in old pancake mixes. Since mixes contain a lot of chemicals and preservatives, I would throw the mix out. Why risk being sick for the sake of a couple of dollars?

Generally, I respect the best-by date for everything. I have a friend who got sick from eating salad dressing that was 4 days over the limit! So, cut your losses and have no worries.

Keep them and enjoy them. Most powdered mixes have Best By dates, not Use By dates. If you use it after the expiration of a Best By date, it may taste a little stale or it may not rise as well as it once would have, but it is not dangerous. If it tastes fine, it is.

The dates ARE on there for a reason, but I doubt you would die from eating it even that old. It might not taste as good as if it were fresh. MAINLY the reason for the date is to ensure that it still rises and bakes properly. No guarantee that it will be at it's best that far past the use by date.

It can go bad, but not like some foods that will spoil. The flour will go stale. The sugar will be fine. I suspect it will taste a little flat. It may be a waste of your eggs and oil.
