Depends the type of fish.

If it's breaded and deep fried then fries with malt vinegar.

Fresh fish that's baked, broiled etc..: steamed vegetable medley, rice, green salad, fettuccini with a light cream sauce, cucumbers with olive oil, lemon and parsley, fresh foccacia flat bread.

A spicy mango salsa spooned on top of the fish is also nice.

Any sort of potato, salad, grits, coleslaw, or a nice fresh vegetable like broccoli or asparagus would all go nicely.
