I have a blueberry muffin recipe that calls for 1/3 cup of milk however I am all out of regular milk, I only have rice milk. Should i just leave it out or replace it with the rice milk? What will be the difference if there is no milk in these muffins?

rice milk will work ok. If you can drink it, you can eat muffins made from it.

I know you can cook with soy milk, so I assume rice milk will be just fine! (And, they'll be healthier!)

If you left it out all together the mix wouldn't blend properly, as it would be much too dry. I would say you should be able to substitute without a problem, in fact it would be healthier!
