I just bought this t-shirt becuase I happen to like shirts with stupid sayings, but it just occured to me that this is a slam on vegetarians and I have a vegetarian friend. To all vegetarians and vegans: would you find this t-shirt offensive?

No I wouldn't, I'm not a vegetarian but you don't have to be one to eat salad. I have salad before our main meal at least 3 nights a week. i use lettuce, tomatoes,cucumbers,olives. red cabbage.and red lettuce. They are grown to be eaten, Just like meat.
