It doesn't necessarily mean "boring". Just laid back and calm. Maybe he admires that quality in you. Is he a little uptight ? Maybe he wishes he were more "mellow" like you portray yourself to be.

Some people have said that I seem so mellow. Sometimes I am pretty laid back but other days I am a little high-strung...depends on what's going on or if I've had a little too much coffee or chocolate ! So...don't sweat it. Time will tell what he meant by that remark.

It could mean that, but it could also mean that he's had a bad experience with a girl that is high-strung and he's noticed that things don;t get to you and make you all crazy at the drop of a hat.
