Hmm lemon and oregano ( sooo fricken good jsut the two on ribs)
rosemary and potato
basil and motzarealla ( obvious haha)
green apples and sharp cheddar ( so amazing)
thyme and potato ( everything goes with potatoes)

Standard Cookbooks like The Betty Crocker Cookbook, the Joy of Cooking, give suggestions for the use of herbs and spices, the inside cover of my 1972 abbreviated Betty Crocker Cookbook and a chart of herbs & spices and their most frequent use.

interesting question. one thing I started doing a long time ago was taste your fresh herbs by themselves, and in a little journal write down their flavor profiles. pretty soon you'll begin to realize what herbs go with what. this doesn't just go for herbs, but spices also, fruits, vegetables, etc.
