I have a piece of barramundi i want to cook up to get rid of but its doesn't taste very nice. Has anyone got any ideas on how to make it taste better? Or a yummy sauce i can make to pour over it?

Orange Barramundi

400 g barramundi fillets
1 orange, juice of
1 orange, zest of
1 garlic clove
100 g butter
30 g dill
1 tablespoon olive oil
125 ml white wine
1 teaspoon black pepper

Crush garlic.
Add orange juice, and orange zest, and chopped dill to a bowl.
Pour over Barramundi fillets, and grind pepper onto fish.
Add fish to a grill pan at low heat, and pour over remaining marinade and some white wine.
Cook fillets on both sides until done, and remove from pan.
Add a knob of butter and another dash of white wine to the pan.
Stir until butter melts and sauce thickens.
Pour over fish to serve.


Alfredos Thai Fish Cakes

250 g long beans, sliced 1/2 cm pieces
2 shallots, sliced
2 red chilies, deseeded and diced
3 egg whites, whipped
1 bunch coriander, chopped
1 red capsicum, deseeded and diced
500 g barramundi fillets, minced
salt and pepper, a very good sprinkling
1 tablespoon red curry paste (or more to taste optional)

Blend all ingredients excluding egg whites and seasonings/herbs in a blender - but not to fine.
Add coriander, lots of salt and pepper and the red curry paste. Mix through.
Fold in the egg whites.
Dip hands into a bowl of water and roll out mixture in palms and flatten into desired thickness/size.
Leave in fridge for 1/2 hour.
Fry, grill on bbq or ovenbake at 180 Degrees C for no more than 15 minutes.
