Type your entire document single-spaced first, format everything the way you want it, spell-check it, etc., until you're sure you're done.
SAVE Your Original Document.
Then select all the text (Ctrl+a) then go to Format pulldown menu, then to Paragraph, and change line-spacing box from single to double. Click OK.
Do a Save As to save a different version of your document so that if you mess it up in any way hereafter, you can always go back to the Original and start the double-space formatting over again.
Then go thru the document and see if you like the way the pages broke up and if not make minor adjustments as you see fit.
Word count is available under the Tools Menu.

Are you talking about double line spacing or double spaces between sentences. For the former you will find the setting under format-->paragraph-->line spacing (older versions of word) or on the home tab under paragraph. If you can't find it, search line spacing in help. For the indices, you need to select the number, then go format-->font and check the superscript check box. In the new version of word (2007) it is a button under the font section on the home tab. Once again, if you search superscript in the help file it will show you how if you're stuck. Finally, if the superscript always comes after a particular word then you can use Ctrl+H to replace all occurences of something in the document.
