You spell it correctly.. I think the reason people spell it with an e is because it is usually potatoes (plural) what they don't think about is you add the es to make it plural hope that helps potato

Amazing how many people are so sure about "potatoe." While it used to be spelled that way, it's now referred to as "archaic."
No dictionary lists "potatoe" as the correct spelling.
