I have no rack to cool my baking on. Is it necessary? What difference does it make?

It's absolutely necessary.

It allow even air circulation all around your baked goods, so that they cool evenly and don't get sticky on the side that's down.

If you are only using one rack in the over, take the other out and use it as a cooling rack. You could also use the rack from your bar-b-que. Just make certain that whatever you use is clean.

It's generally not necessary. But you DO want to remove your baked goods from the pan they were baked on. Put them on parchment paper or a cutting board, etc. A cooling rack just lets the item cool faster. Leaving it on (or in) the pan can cause it to continue cooking and become overdone.

its better to use a cooling rack so that the baked item can have complete circulation to cool . I t keeps it from being soggy also.. Use a broiler pan it has the slotted tray on top

It's not usually necessary, no. the rack just lets things cool down faster because it lets heat escape from underneath the product as well as from the side and on top.

depends on what you're making. if you're making bread then yes you do need a cooling rack of some kind...you need air to get to the bottom of your baked good otherwise the bottom can get soggy.....

been there-done that...learned the hard way
