It really easy..i use this recipe in my restuarant.. first take 3 tablespoons of white flour and 3 tablespoons of butter and let both cook in a pan.. cook out the flour and let the mixture get a golden brown color.. this is called a roux. add the roux to 2 qts of heavy cream and bring to a boil.. reduce mixture by 1/2....... once reduced add 1 cup fresh parmasean cheese stir in until smooth creamy texture .. salt pepper to taste. cook noodles and chicken .. serve the chicken sliced on top of the noodles and sauce. if want a quick garnish for this you can chop red bell peppers and sprinkle on top. for a quick and easy side dish you can make garlic bread with a roasted garlic olive oil spread.
for the bread take 2 bulbs of garlic and cut the tops off. rub with olive oil and wrap in tin foil. bake in a 400 degree oven for 15-20 mins. when done squeeze the bulb and rub the cooked garlic on toasted french bread. it quick , easy, AND FAT FREE.. Another side is a quick and easy mixed greens salad with a crramy vinagrette with cherry tomatos and fresh mozzarella balls. again quick and easy.. all these items can be purchased ahead of time and prepping all this is very stress free..
Plus cooking for a special occassion should be fun and enjoyable in both cooking the food and eating the food..
Ps.. for a drink get any sparkling apple cider and drop wither fresh blackberries or rasberries your choice.. it full of flavor and non alcoholic...

I can tell you an excellent dessert since your going italian it is called tiramisu, most of your italian resturaunts should have it . As for drinks I would go for a nice sangria (no alcohol) that can be found in a mexican grocery store as far as the alfredo use a standard recipe but add something different a little cilantro always livens up the dish also can be found in them mexican store or in your local supermarket depending where you live. Last but not least the trick is not to over cook the noodles, cook as directed then immediatley rinse in cold water so the do not stick together you can always heat them back up after you add the sauce. good luck

Chicken Alfredo
Quick and easy dinner with broccoli, zucchini, and red
bell pepper.
The sauce is enriched by cream cheese.
Servings: 4
Ingredients:
6 ounces dry fettuccine pasta
1 (8 ounce) package cream cheese
6 tablespoons butter
1/2 cup milk
1/2 teaspoon garlic powder
salt and pepper to taste
2 skinless, boneless chicken breast halves -
cooked and cubed
2 cups chopped fresh broccoli
2 small zucchini, julienned
1/2 cup chopped red bell pepper
Directions:
1. Bring a large pot of lightly salted water to a boil.
Add pasta, and cook for 8 to 10 minutes, or until al
dente; drain.
2. While pasta is cooking, melt cream cheese and butter
in a skillet over low heat.
Stir until smooth.
Stir in milk, and season with garlic powder, salt, and
pepper.
Simmer for 3 minutes, or until thickened, stirring
constantly.
3. Mix in chicken, broccoli, zucchini, and red pepper.
Cook 3 minutes over medium heat, then reduce heat, and
simmer 5 minutes, or until vegetables are tender.
Serve over fettuccine.
Chicken Alfredo Casserole
6 ounces fettucine or medium noodles, cooked and drained
10 ounce package frozen broccoli cuts
3 tablespoons butter or margarine
3 tablespoons flour
1/2 teaspoon dried basil
1/4 teaspoon salt
1/8 teaspoon pepper
2 1/4 cups milk
2 1/4 cups chopped cooked chicken
1/2 cup parmesan cheese, for sauce
1/4 cup parmesan cheese, for top
Cook pasta according to package directions: drain and set aside. Run
water over broccoli to thaw. Sauce: In large saucepan, melt butter or
margarine. Stir in flour, basil, salt, and pepper. Add milk all at
once. cook and stir until thick and bubbly. Cook and stir one minute
more. Remove from heat; Stir in chicken, 1/2 cup Parmesan cheese, and
well drained broccoli. Add pasta and toss to coat. Place chicken
mixture in greased 7 x 12 x 2 inch baking dish. Cover with foil. Bake
at 350F for 20 minutes. Remove foil. Sprinkle 1/4 cup Parmesan
cheese. Bake, uncovered for 5 to 10 minutes more or until heated
through.
Chicken Alfredo Pasta
2 cups rotini -- uncooked
10 ounces frozen mixed vegetables
9 ounces skinless boneless chicken breast -- cooked
15 ounces alfredo sauce
1/4 cup grated parmesan cheese
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
Cook pasta and vegetables together in boiling water in a dutch oven
10 minutes or
until pasta is done and vegetables are tender.
Drain and return pasta and vegetables to Dutch oven.
Add the chicken, soup, cheese and salt, stirring well.
Cook over low heat 2 minutes or until thoroughly heated.
Sprinkle with freshly ground pepper.
side dish: a salad of tossed greens, mandarin orange segments and vinaigrette dressing
drinks: something mocktail or warm apple cider and or non alcohol punch
desserts: i would say fresh warm baked pie

fettucini alfreado is good. I made it, basically, you just make noodles and sauce...and then you eat it.
