I think you would be happy with the Canon Powershot A640. It has a decent sized sensor, although it is indeed a fraction of the size of the XTi sensor. You can control aperture and/or shutter speed or just leave it in automatic. It's a 10 MP camera and it is very well-reviewed. If you want to cut the price a bit more, look into the 8MP Canon A630.
Check out this comparison page. Click on "In-depth review" and "Read Owner Opinions" for each camera. Be sure to note that the reviews are many pages long so you don't stop after page one. Check the sample images, also. You can enlarge these to full size images if you click on the link below the picture. You will have to then put your cursor in the white space to the right of the picture and click once. After that, you can pass your cursor over the image and it will turn into a magnifier. Click it as a magnifier once and the image will go to full size and you can really examine the detail or look for artifacts like fringing or noise.

The short answer is yes. Given the right conditions and settings, you can get a picture from a powershot that looks the same as one from the XTi.
However, there's a lot of shots that can be done on the XTi that just can't be replicated at the same level of quality using a non-dSLR. A dSLR is a much more versatile camera and can take good photos where point and shoots can't. Just one example is taking pictures indoors with low light. Others are using their P&S cameras and are stuck having to use the crappy onboard flash. Because I have a fast lens and couple that with the great high iso performance of my camera, I'm able to forgo using the flash and get much better pictures as a result.

If you have enough lighting and take still pictures then yes. But in low light nothing in the compact camera can compare to an SLR. Since your only going to take pictures of fruit, the Powershots should be fine for your purposes.
