The classic recipe from the Waldorf Hotel in NYC:

(Dry Ingredients to serve four)
2 cups chopped, cored apples (Red Delicious, Roma, Fuji or Gala work well)
1/2 cup Candied walnuts (walnut halves or pieces that are not candied work also)
1/4 cup Diced Celery
1/2 cup Raisins
(Wet Ingredients)
1/2 cup Mayonnaise
1/3 tsp Dry Mustard (powdered mustard)
1/2 oz Fresh Lemon Juice

Mix all "dry" ingredients in a bowl, the proportions are not critical. Adjust them to your taste. Mix wet ingredients until blended well and combine with dry ingredients. Chill and serve

Start with some fresh baby or field greens. Add grilled chicken, green seedless grapes, granny smith apples, pears, celery, candied walnuts, some gorgonzola or blue cheese.
Dijon balsamic dressing: mince a clove of garlic and add in a touch of balsamic vinegar. Add sugar (brown sugar, white sugar, or even honey), dijon mustard, and lemon juice. Stream in olive oil until you get a desired tartness of dressing.
Toss all ingredients and enjoy!
