Hi Nichole!!
These are not "Poppers", but these are very tasty & somewhat similar to the "Poppers"...

Armadillo Eggs

20 servings
30 min 5 min prep

1/2 lb shredded monterey jack cheese
1/2 lb shredded cheddar cheese
1/2 lb hot breakfast sausage
1 1/2 cups Bisquick
1 egg, beaten
1 (5 ounce) package spicy Shake-and-Bake
20 jalapenos

Slice the peppers in half lengthwise down one side only and scrape out the seeds. If you accidentally cut all the way through, just try to keep the two halves together.
Mix Bisquick, sausage and cheddar in a large bowl.
Place the beaten egg in a shallow bowl,
also put the Shake N Bake in a shallow bowl.
Stuff each pepper with shredded jack, then stick the halves back together, if separated.
Grab a handful of the sausage mixture and wrap around the pepper in the shape of an elongated egg.
Dip in beaten egg and roll in Shake N Bake to coat evenly.
Place on a greased baking sheet. When the peppers are all ready, bake at 350F for 25 minutes or till crisp.

This recipe for Armadillo Eggs serves/makes 20

CAUTION! IF USING HABANEROS, USE OWN DISCRETION AS TO PEPPER PROPORTIONS. Maybe make some jalapeno and some habaneros.

**Be sure to de seed peppers accordingly depending on your tolerance for oral agony!

JALAPENO CREAM CHEESE POPPERS

wonton skins (found in produce section of grocer)
fresh jalapenos or a jar of jalapeno slices
8 oz. of cream cheese

Lay wonton skins on a clean, dry surface so that each skin is in the shape of a diamond. (They come in a square shape, so just turn them.) At the bottom corner of each skin place a square of cream cheese.

If you have fresh jalapenos, slice them in rings and clean seeds, I encourage to use the jar of jalapeno slices. If you are using the jar of jalapeno slices just drain the juice from the jar.

Place 2-3 slices on each square of cream cheese.

Fold the wontons starting at the bottom corner...fold bottom corner up, then fold in each side (sort of like an envelope), then fold the top corner down. If the wontons aren't sticking very well, wet your finger-tip and run it along the edge and it will then stick.

Once you've completed your desired amount, deep fry until golden brown.

Fry a few catfish fillets and shrimp. Remove the tails from the shrimp, then finely chop fish and shrimp. Cut a slit down each pepper. With a spoon, scrape out the seeds and white membrane inside. Fill with seafood stuffing mixture, coat in egg, and flour/cornmeal mix, and fry. These are absolutely unbelievably delicious when dipped in ranch dressing!!!

Slice the peppers in half. Take a spoon and scrape out the seeds and white stuff. Fill with cheese, put in a 350 degree oven and bake. OR coat in egg, and flour/cornmeal mix, and fry.
