Barring religious and cultural holidays that are particular to certain countries and governments, like Christmas, Thanksgiving, or Kwanza, I believe that it is Independence Day (also considered the "birth" day of a country).
Nearly every country that exists today has been developed in the wake of a previous one, in the struggle for independence. Not every country celebrates this, however, as some are in the midst of civil war and cannot mediate between rival factions.
