Never heard the phrase. All I can suggest is it may have come from a song I heard a long time ago on the Dr. Demento show called "My name is Larry" That was the whole song....the same phrase repeated over and over and over.....you get the picture. The image was of a big dumb dufuss who was just happy to be a big dumb dufuss.

A guy who lived in the 18th century. He visited villages, and county's being as happy as anyone. If there was a war, he'd be happy, in sickness or in health- he'd be happy!. This got him fame, and thus he was called "Happy Larry", Now we use the phrase happy as Larry, in correlation to "Happy Larry".

"Happy as Larry"

An Australian expression, it is suggested that the original Larry may have been Larry Foley (1847-1917) the noted boxer but the
word may actually derive from "larrikin" an Australian term for an unruly young man.
