cod au gratin is one of the best fish dishes out there. I woudn't try cheese with anything but a white fish. Although I have seen recipes for parmesan crusted salmon, but that sounds kind of icky.

The only fish and cheese dish that I can think of that is tolerable is a Tuna Melt.
As a chef for thirty years, I tried to combine the two into something palatable and had only minor success. The most crowd (customer) pleasing seemed to be a grilled salmon steak topped with grilled asparagus spears, baby shrimp, and shredded Danish Havarti cheese. I didn't particularly like it myself and other than that one dish....

Yes! I make a fish pie that consists of smoked white fish (cod or haddock usually), salmon and large prawns in a thick cheese sauce (not too cheesy, not as much as I'd put in macaroni cheese, just enough to give it a tang) topped with mashed potato. Yum yum!
