You can get pure vanilla bean. You scrape the pods to get the seeds, which can then be used in recipes. If you're making something with sugar, an easy way to do this is to have "vanilla sugar." You can buy this or make it by leaving a few pods in a container of sugar.

Be aware that "Bourbon Vanilla" does not contain bourbon, the alcohol.

I recommend http://www.penzeys.com/ as a source of vanilla beans and vanilla sugar.

Depending on how you are using it, the two best methods are

1) The whole bean - If you are making a liquid dish that will be heated (like a custard, or vanilla milk). To use the bean, slit lengthwise, and scrape out the seeds into your recipe along with the bean (which you will remove at th end).

2) Vanilla Sugar - coursly chop a vanilla bean, and put it into a few cups of sugar. This takes some time (a few weeks) with daily stiring, but the sugar will pick up an intense vanilla flavor.

3) Vanilla powder - I have not seen this available in my supermarkets, but i have seen it on the internet, and it has gotten rave reviews. I don't know how long this has been on the market, but I have only recently heard of it.

Your question is very interesting, so I checked some websites and cited some sources below that I hope are helpful. According to the research, powdered vanilla doesn't contain alcohol, and the last reference includes a place to buy powdered vanilla, although there are a number of places to buy it, including Trader Joes, if you have that store in your area. You can just google powdered vanilla to find more online sources. However, according to the research, the Muslim tradition has very stringent restrictions on the preparation of powdered vanilla, and some powdered vanilla is prepared using alcohol so it violates Halal dietary law. Hope this is helpful.

Extracts by nature contain alcohol, due to the chemical process of extraction.

You can try vanilla beans or vanilla sugar.
