Believe it or not a banana is an egg substitute in baking.
That said use any cupcake recipe you like and instead of egg for each egg called for use 1 mashed banana.
You can even do this with cake mixes. Just follow the ditrections on the box, and, if you don't want to use the oil called for then use an equal amount of applesauce or babyfood applesauce.

To bake, put the cupcake liners in the muffin tins and fill 2/3 full of batter.

Hope this helped.

Banana Cupcakes, Eggless

Ingredients:
1 1/4 cups sugar
1/2 cup butter
1/2 cup apple sauce
1 teaspoon baking soda
4 tablespoons sour cream
3/4 cup pecans or walnuts, chopped (optional)
1 1/2 cup banana, mashed
1 1/2 cups pastry or cake flour
1 teaspoon vanilla
Cream butter, sugar and the baking soda, dissolved in the sour cream.
Beat well, then add bananas, apple sauce, flour, 1/4 teaspoon salt and vanilla.

Bake at 350 degrees Fahrenheit oven 20-25 min. or untill a toothpick comes out clean. Cupcake pans can be placed on the oven rack, when filling the liners fill two thirds full.
