Flourless Corn Bread
This is made with cheese, green chilies, red bell peppers, and garlic powder instead of clove garlic but feel free to experiment. If you just want plain then leave out all the extra's, it'll still taste great.
Ingredients:
1 cup yellow cornmeal
1 teaspoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
3 large eggs
1 cup milk
1/2 red bell pepper, chopped and diced
1/2 medium sized onion, chopped and diced
1/4 teaspoon garlic powder
1 4-oz can diced green chilies, drained (less if you prefer a less spicy bread)
1 cup corn kernels--fresh, frozen, or canned
11/2 cups grated cheese, cheddar or jack
Preheat the oven to 400 degrees. Grease a ten-inch skillet and place it on the middle shelf in the oven.
Directions
1. In a large bowl, stir together the cornmeal, baking powder, sugar, and salt. In a medium bowl, whisk the eggs then stir in the rest of the ingredients, reserving 1/2 cup of the grated cheese.
2. Form a well in the dry ingredients and pour the wet ingredients into the dry ingredients. Mix with a spatula until well combined.
3. Carefully remove the hot pan from the oven and immediately pour the batter into the pan. Sprinkle the remaining cheese on top and return to the oven.
4. Let bake for 20 minutes or until a toothpick inserted in the center of the pan comes out clean. The top will be a rich, golden brown. Let cool for ten minutes before unmolding.

Sweet Milk Cornbread (without Flour)
2 cups yellow cornmeal
1-1/2 teaspoons baking powder
1 teaspoon salt
1 egg, lightly beaten
1-1/2 cups milk
2 tablespoons melted shortening or vegetable oil
Preheat oven to 450°F.
Combine the cornmeal, baking powder and salt, and set aside.
Stir together the egg, milk and vegetable oil.
Combine cornmeal mixture with milk mixture, stirring just enough to moisten.
Pour into hot, well-greased 9- or 10-inch skillet or pan, muffin tins or corn stick molds.
Bake 12 to 15 minutes for muffins or corn sticks, and 18 to 20 minutes for pan or skillet.
Cornbread will begin to pull away from sides of pan.
Makes approximately 12 muffins, corn sticks or pieces.

Just look for cornmeal,NOT cornmeal mix.the mix has flour added and the cornmeal does not..happy cooking
