well i'd go with a light salad to start caesar, or pasta, as for a main course serve bonless chicken breast steamed broccoli and texas toast

Try preparing a fondue party. That way everyone can have what they want. 1 oil fondue pot for every 4-6 people is usually sufficient. And have a variety of sauces both spicy and sweet to accommodate for everyone's tastes. Meat items could include small (skewer sized) beef, pork, chicken, etc. Have some raw veggies & dip on the side.
You could also incorporate a cheese fondue pot (breads) AND a chocolate dessert fondue (Mmmm, strawberries & chocolate fondue!).
It's a lot of fun for a dinner get together if you're not in a big rush.

Potato and Onion Soup
1/4 cup margarine
1 onion, thinly sliced
2 leeks
2 red potatoes, peeled and sliced
2 quarts water
1 tablespoon salt
1/4 cup margarine
1/2 cup heavy whipping cream
3 tablespoons chopped fresh chives
In a heavy 4 quart pan, melt 1/4 cup butter and onion until wilted. Add cleaned and sliced leeks, potatoes, water and salt. Bring to a boil and simmer, partially covered, for 45 minutes or until potatoes are very tender.
Remove from heat and cool if you want. Blend the cooked mixture until smooth. Return to the saucepan; add 1/4 cup butter, cream and chives. Check for seasonings. Heat, but do not boil or the cream will curdle. Serves 7.

Pecan Chicken with Dijon Sauce
Ingredients:
4 boneless chicken breasts
1 1/2 sticks of butter
4 tablespoons Dijon mustard
6 ounce of pecans, finely ground
2 tablespoons canola oil
2/3 cup sour cream
1 teaspoon salt
pepper to taste
Preparation:
Place chicken between 2 pieces of waxed paper and pound gently until about 1/4 inch thick.
In a microwavable bowl, melt 1 stick of butter and 3 tablespoons of the mustard until just melted. Whisk to incorporate. Place the pecans on a dinner plate.
One by one dip the pounded chicken breasts into the butter/mustard sauce then into the pecans, coating thoroughly.
Melt the half stick of butter in a skillet, add the oil and heat to medium. Sauté the chicken for a few minutes on each side to brown and transfer to a casserole dish. Place in a medium oven (300°F) for about 6 more minutes.
Drain the pan of oil and deglaze with the sour cream, stirring with a whisk over medium heat. Add the remaining tablespoon of mustard and season with salt and pepper.
Place a pool of the sauce on each of four plates and place the cooked chicken on top.

I would definitely go with a salad, like everyone else said. You can also make some small grilled chicken breasts (like the frozen ones that come wrapped individually) and play around with a glaze for them like orange ginger or something. Also, you can make a light pasta with a mixture of olive oil and different spices. I would stay away from any breads or red meats. And I would also stay away from heavy wines. You might try serving sparkling water with it with a little lemon.

If you have spaghetti or any pasta noodle, you might want to do a lite dirzzle of olive oil with tomatoes and some basil. You can also add some lightly sauteed garlic. You may also want to put some parmesean cheese. You could also make a side Ceasar salad. It's pretty inexpensive.

How about fixing a nice soup and a large salad with garlic roasted chicken atop or shrimp atop? and hot rolls?
If you're not much of a cook, or don't have the time, you can purchase some very good fresh/ready made soups from some grocery stores - or you can buy frozen soups such as lobster bisque ...many are very good.
Making the salad is super e-z - buy a bagged caesar salad...add the shrimp or chicken.
heat some good rolls...and VOILA!

how about linguini with a light olive oil/parmesan/garlic sauce. add some steamed brocolli and grilled chicken or shrimp. sprinkle fresh basil over the top. have some nice crusty italian dread on the side.

why not this... Baked Fish with Spinach and Tomatoes
its light and easy to make
this is what you will need
1 6-ounce bag of baby spinach
4 white fish fillets
Freshly ground black pepper
1 14.5-ounce can crushed tomatoes
1/2 cup reduced fat shredded cheese
Preheat oven to 375 degrees. Rinse spinach and place at the bottom of a glass baking dish. Season fish fillets with freshly ground black pepper. Lay fish on top of spinach. Pour canned tomatoes on top and sprinkle with cheese.

how about just making some easy tapas (appys) if it has to be a light meal try making a bowl of bruschetta and serve it with a crusty french baguette. skewers of grilled meat and veggies with some olive oil, a marinated artichoke heart salad, and a few other munchie type items.
