I have some in my freezer and I don't know what to use them for because I don't know what they are. Can they be used for a main course?

They are the very tender strips of meat that run down either side of the spine.

Thaw and season, sear in a fry pan on each side in a little oil to brown and then put it in a preheated oven until it is cooked to your degree of thoroughness.

Overcooking will make it dry out.
Allow to rest before carving.

De glaze fry pan with a little stock scraping all of the bits off the bottom add some butter and reduce.
Pour the gravy over meat on plate.

The backstrap is the muscle that runs along the backbone(spine)
On the inside and outside of the body cavitiy, this is the choice cut of meat, known as t-bone and porterhouse! gotta go, this made me hungry!

first i marinate the in olive oil, coat them rosemary, black pepper and garlic.
then i sear them in a hot cast iron pan about 3-6minutes per side until done through the way you preferr.
in our opinion, its the best part of the deer!
try out a couple of recipes, venison can be a pure joy to cook! just be patient with it! it over cooks very quickly!

I think you are refering to tenderloin. It is a very tender, low fat meat. You can use it for anything you would use beef for. It makes great steaks also.

they're the same thing as loins. just do a google search for venison loin recipes.
