Hi...I have 2 suggestions to start out with.

First is probably the best overall cookie site I've found. It's been a great resource year round even though it says xmas cookies. And ironically most of the no bake don't have chocolate in em. Here is a link to no bake cookies on it;

I wish I could give you a specific good recipe, but the ones I tried involved baking. But at least I know the site has some good tasting recipes on it. And not sure why but 1 or 2 that show up as no bake involve some cooking (guess they are specific and don't consider other forms of heat ie pizzelle iron or frying baking). But almost all are totally non-cook and all are technically no bake. Just a heads up.

Another popped into my mind. About a month or so ago Elizabeth on The View did a segment on no bake cookies without wheat. I remember Rosie found them surprisingly good lol. I went to their web site to try to find you a link but boy is it an unorganized mess. I would bet they are on there somewhere if you are in the mood to poke around. The main site is;

well, lets see. heres a cool one:
THEYRE VERY EASY!!!!!!!!!!!!!!

but you dont want chocolate. so subnstitute another frosting like lemon and in the middle instead of a hersey kiss u can add w/e u want. like a lemon candy would be great. hope you enjouy these!!!!!!

Chocolate Thumbprint Cookies Recipe courtesy Sandra Lee Semi-Homemade Desserts, Miramax Books, 2003.

1 cup very finely ground almonds
1 (16-ounce) container dark chocolate frosting
4 tablespoons (1/2 stick) butter, at room temperature
2 1/2 cups graham cracker crumbs
1/2 teaspoon pure almond extract
48 chocolate kiss candies (recommended: Hershey's)

Pulse almonds in a food processor until very finely ground, like coarse sand. Pour ground almonds into a pie pan or other shallow bowl and set aside. Beat chocolate frosting and butter in large bowl with a hand mixer until well blended. Stir in graham cracker crumbs and almond extract. Shape chocolate mixture into 1-inch balls. Roll each ball in almonds to coat. Place balls on a cookie sheet. Using your finger, make a deep indentation in the center of each ball. Fill the indentations with chocolate kiss candies. Refrigerate for 30 minutes, or until cold.

No Bake Peanut Butter Cookies

INGREDIENTS
1 cup white sugar
1 cup white corn syrup
1 teaspoon vanilla extract
2 cups peanut butter
4 1/2 cups crisp rice cereal

DIRECTIONS
Cook over medium heat the white sugar and the corn syrup for one minute. Remove from heat and add the vanilla, peanut butter and crispy rice cereal.
Drop by teaspoons onto wax paper. The cookies will be slightly soft when done.

I haven't seen one but i'll tell you this all use cocoa on one basis or another
