Generally spealing, last rites are performed according to the person's own faith (not all have last rites)
If it is not known what faith, if any, there was then the person conducting the ceremony has to do it according to their own understanding of God.
Personally, believing that God knows all anyhow, I would not conduct last rites but would offer a simple prayer.

last offices are carried out according to one's religion or beliefs..
if appropraite next of kin's can confirm of the action to be taken, otherwise it would be done according to hospital polices being nice calm, peaceful, i myslef would say a prayer but thats just me...
certain religions need the body to face mecca, some dont let nurses touch the body afer death as they prepare them as it;'s seen as preventing the spirit leaving the body, in hositals there is a book wih all the procedures to follow when carrying out last offices
