If you offer a girl a movie date and she says she only wants to go as friends, because she isn't into any boyfriend right now, and is only into building friendships... however, she says that it's possible that it can go beyond friendship level and she won't necessary stop things if she sees she's looking to see me again, would you still try your luck with her and keep her around as a possibility in case she comes around some time in the future, or just completely forget about her, because it'll only be nothin but a waste of time? Also, if you ever has a case where a friend became a lover, feel free to mention it.

It sounds like she is actually looking for someone. I would tell her that she can count it as friends but you are counting it as a first date. Pay for her ticket and food. Dont make a move unless it is open but treat it like one and maybe it will be. If it is too friend like then just tell her you have too many friends and just want a gf.

She does not like you and only wants to be Friends. She just says that it 'could grow' because she knows that is what you want to hear. The chance of that happening is very low.
