Cut the mango in half and twist it so that the stone falls into one half. Remove the stone and cut each half of the mango horizontally and vertically about 1/2 inch apart. Turn the mango inside out and all the flesh is just waiting to be eaten! Enjoy.

If mango is still fairly firm, you can peel skin with a good vegetable peeler (I've done it before).
Careful! The peeled flesh can be slippery!
You can then cut the flesh away from the stone.
Put the mango on the chopping board. although its kind of oval shaped, it will naturally sit on the flatter sides. The stone of the mango is large and flat and will be lying horizontally through the middle of the mango. Keep this in mind when you are slicing.
Now, as if you were to turn the mango over to the opposite flat side, hold the mango between thumb and forefinger and tilt mango 45degrees. The flat sides should be on left & right.
You need to slice the mango just off centre to allow for the stone. So, move knife 1cm to right of the middle and slice all way through. You should be able to cut and miss the stone. For the other side, cut through at 1cm to the left of the middle.
You should have 2 sides of mango flesh to cube or slice as you wish.
If you don't want to peel mango first, you can still follow instructions to slice the 2 sides of mango. Then score through criss-cross lines into flesh without piercing skin. Holding a mango side in your hands, turn it inside out (into hedgehog mango) so cubes pop up. You can scoop these off with a teaspoon.
My mum used to gives us a mango side with a teaspoon to scoop the flesh out for our dessert after dinner!
As for the stone, pick it up and nibble the flesh off! Messy but nice!

Stand it over the cooking table with the narrow part in front of you. Take a big cooking knive and cut the sides, inserting the knive very close to the center (you know, close to the point where the mango where hanging from the tree),... one at a time...
Then take one side with the peal over your hand and with a small knive make squares (cutting in lines north south and then east to west) ... you must be careful of not cutting the peal.
Then push on the center of each side (by the peal) and you will have little squares (that removed or not) may be used to decorate a dish or to add to a salad... it is just an idea

Slice around the middle of the long axis with a sharp knife right into the stone. Then widen the slit at the thick end a little.
Push a flattish large serving spoon into the slit at the end and wiggle it over the stone. This breaks the stone-flesh interface.
Do the same for the 'bottom' of the stone.
Separate the two halves, remove the stone and there you are.

Cut round the middle and twist to get out the stone.
You are left with two halves.
Make a criss-cross patten on the inside - as if cutting cubes.
Go almost through to the skin.
Now turn it inside out, the cubes are all standing proud and are easy to chop off.

cut the mango lengthwise but slightly off centre and all the way round.You can then ease one half away from the other.There will be one half just fruit and the other half will have a flattish stone in which is easy to remove

the big stone is the pit cut along the pit all sides and enjoy you can cube it for saladsonce you cut it lay it down can cube

if there really ripe you can just peel them but if there not to ripe i would take a knife cut the skin off keep doing it in strips then when you get to the seed just stop. hope this helped!

dont take the over ripe ones.skin them.then cut it approximately two centimetres away from stem.then cut them into cubes.
it will be easier with the big ones.
