Now egg-salad itself in a sealed container can last up to ten days in fridge, however once a sandwich is made after several hours the bread begins to get kinda soggy the sandwich is still very edible however not desireable

If it's already made into a sandwich, no more than two days tops from the time you assemble it. The bread will start getting mushy and everything. A bowl of egg salad I wouldn't go longer than 3 days.

As a general rule, I NEVER leave any cooked/ leftover food in the fridge for more than 3 days. After that, funky things start happening to the food! I'm paranoid about the bacteria and everything else that grows on food after 3 days, so I throw it out after that!!

it don't,have to be more than a day if you want to enjoy it. when egg stay long in the fridge it will have strange odour you will not like. and also the taste will change.
