How about not taking it? Would the thyroid just die out and lead to goiter?

I'm not aware of any side effects really, just if you don't take them you'll eventually be plagued with so many symptoms.

Over time, the thyroid probably just slow down its production of thyroid hormone so dosage will probably increase over time.

Goiter will usualy not result if you faithfully take your thyroid meds.

I've taken them for 10 years with no problem. Stop taking them and you'll gain wait, lose energy, get dry itchy skin and be at risk for depression among a bunch of other things.

This question is a bit tricky but I have personal experience in this -first off if you have the condition then take the meds the benefits out weigh the minor side-affects. without taking the meds you wont have any stamina and will be chronically fatigued.
