All of these answers are good ones. To elaborate a bit more, look up Glycemic Index and read up on it. Knowledge is power.

The basics of it are that high GI foods enter the bloodstream quickly and cause the pancreas to flood the body with insulin to reduce blood sugar. Insulin promotes the storage of fat, and you can see why this is a problem.

Low GI foods like wheat bread and pasta, brown rice and sweet potatos digest much more slowly and help to regulate blood sugar levles. Kepping these levels on an even keel helps you keep the fat off. That is also why it is important to eat smaller, more frequent meals.

Answers already given, but it still doesn't hurt to use the common sense we were all expected to have before the introduction of date stamped foods and domestic refrigeration. If in doubt about eggs - we floated them and unless they were to be boiled, always cracked them into a cup rather than into a cake mix; it would have been a disaster during the War years if your one egg of the week ration was off and ruined a cake. We always checked things - if it looked alright, if it smelt alright, if it tasted alright - it was probably alright. The only time I had food poisoning has been since the date stamping and that was a meal of mussels in an hotel! Twice since the introduction of date stamping I have opened a fresh product well before its "use by" date and the contents were obviously off. You might be interested in the concept of date stamping a jar of honey with a "best before". Honey found in jars in the Pharoahs tombs in Egypt was found to be still edible after 5,000 years, Just a little old lady ramblings!

Just keep in mind that if it's a white startch it's bad. Fruits contain carbs but they are good carbs. Brown rice and Wheat pasta and Wheat bread are good, white rice, white pasta, potatoes, and white bread are bad.

"Bad carbs" (simple) are foods like white bread, white rice, pasta and all typical junk food high in sugar.
"Good carbs" (complex) on the other hand are foods such as oatmeal, whole wheat bread, brown rice, and other whole grains.

it's pretty simple..

good carbs are naturally occurring and still in the natural form. whole oats, whole grain rice, lentils, beans, yams, etc. foods that have not been processed.

bad carbs are processed and 99% of the time are pre-packaged, most breads, crackers, cookies, chips, pasta, etc.

Look up the hypoglycemic index. This will tell you which foods to consume.
